Concession Stands

Ice cream is another favorite concession food. It is made by freezing a mixture of cream, sugar, vanilla and other ingredients together. To create the creamy texture that it is characteristic of ice cream, the mixture is turned with a paddle as it freezes. This keeps the creamy mixture from freezing into a solid block of dairy ice. Today ice cream is a multi-billion dollar industry that creates dozens of new flavors each year. However, vanilla and chocolate remain the top sellers.
Shave Ice and Snow Cones
Because the concession business is busiest during the warmer months of the year, shave ice and snow cones remain popular products to sell. While made with basically the same ingredients, shave ice is not the same thing as a snow cone. Snow cones are made with an ice base that has crunchy, coarse ice crystals. These ice crystals are then topped with a flavored syrup. Shave ice, on the other hand, have a much finer ice particle that is created by taking ultra-fine shavings from an ice block. The shavings are gathered in a cone or cup and then topped with the flavored syrup.
